spices for tea

A mix of ground spices* – cardamom, fennel, cinnamon, cloves and ginger

Sometimes I mix water and milk, bring it to the boil, add a teaspoon of tea with a scant half teaspoon of the spices and simmer for a couple of minutes.

Other times I heat some milk with a good pinch of the spices and pour it into a very strong coffee.

Just for a bit of interest. Not a chai latte.

* (I tend to toss the spices in without measuring but as a rough guide) grind together the seeds of 8 cardamom pods, 4 teaspoons of fennel seeds, 2 teaspoons of coriander seeds and 4 cloves. Add 1 teaspoon each of ground cinnamon and ginger with a good grating of nutmeg. If you like a bit of heat, add some ground pepper. Sometimes I add a bay leaf too.
