have a heart jammy dodgers

As close as I get to “romance” for Valentine’s Hallmark Day* (no shocking love tokens ordered from Daisyley for me) and slightly more attractive than the dish I served up last year. In a fit of enthusiasm and forward planning I made them yesterday, ready to put on the table today. I have no idea why I thought it was the fourteenth today – all that pancake tossing yesterday must have scrambled my brain – but anyway I’m sure there’ll be some left over for tomorrow.

To make Have a Heart Jammy Dodgers:

Beat together 125g soft butter with 125g caster sugar.

Add 1 beaten egg.

Beat in 220g plain flour and 30g custard powder to make a soft dough.

Roll out the dough 3 – 4mm thick. Cut out round shapes and then cut out a heart from the middle of half of them.

Put them on a greased baking sheet and bake for 15 minutes at 190C until they’re pale brown.

When the biscuits are cool, sandwich together with jam and (if you’re feeling really decadent) butter icing made with 50g butter, 100g icing sugar, ½ teaspoon vanilla extract and 1 teaspoon milk.

OMG! I love that name, Jammy Dodgers (sounds like a group of naughty boys)! These cookies look so beautiful and delicious, I would have to have them with the butter cream, yum!
