Palm Sunday

The weather forecasters were right and the snow fell. A light snowfall to make everywhere pretty but not disrupt life in this part of the country.

Enough snow to make staying inside seem attractive. The sort of day to bake and eat cakes. Lemon cake (with lemon curd to use up loads of eggs) decorated with the last of the crystallised flowers from last year and Hosanna Cake (from Elizabeth’s recipe) because it’s Palm Sunday, which makes eating a cake made with dates and bananas somehow appropriate.

    As soon as I saw the lemon curd I knew why you’d made it! We have no eggs, because the farm shop has no eggs, because it has only just reopened after all the snow, which was a wee bit more disruptive in North East Wales! In fact we’re worried for our farmer friend’s livestock. Is there no end to what the weather can find to throw at farmers this last twelve months!

      A Victoria sponge with lemon curd does use up a lot of eggs! I don’t envy livestock farmers in Wales; it always looks hard work especially as you seem to bear the brunt of the bad weather and makes me grateful to live in the warmer east. Hope for your farmer friend that the snow is disappearing.
